Ingredients
  1. 1, 5-7lb chicken
  2. 1/2 Cup Scott's Spice Rub
  3. 1/2 Cup Cider
  4. 1 TBSP Butter, melted
  5. 1/8 Cup Scott's Sprice Rub
  6. 2 Whole Apples, chopped
  7. 2-3Tsp MV Sea Salt
Instructions
  1. Preheat Oven to 350 or Convection 325;
  2. Dry almost room temperature chicken inside and out with paper towels;
  3. Salt cavity with 2-3 tsp MV Sea Salt;
  4. Stuff cavity with chopped apples;
  5. Twist wings to fit under breast;
  6. Wash your hands, and place bird in roasting pan;
  7. Use 1/2 Cup of Scott's Spice Rub* every surface or chicken
  8. Roast for 1/2 hour;
  9. Brush on mixture of cider, melted butter and more of Scott's Rub every 1/2 hour until chicken reaches 165 degrees Fahrenheit, about 20 minutes per pound;
  10. Remove from oven and let stand at least 10 minutes before carving.
Notes
  1. When using a locally raised bird, expect that the bird will reach 165 more quickly. And, if you brine the chicken then expect to shave off about 20 minutes from cooking time.
